Coffee Energy Bites and high-guality coffee

The key ingredient in this recipe is coffee—we recommend using a freshly brewed espresso or ristretto made from Less Robusta Kick beans. This coffee is best prepared using an espresso machine or a moka pot and blends perfectly with the natural sweetness of dates. You'll find notes of nuts, cocoa, chocolate, and dried plum, making it a flawless match for the rest of the ingredients.

Recipe for Coffee Energy Bites

Servings: 3 (about 15 bites)

Ingredients:

  • 200 g Medjool dates, pitted
  • 50 g shredded coconut
  • 50 g finely ground almonds
  • 10 g chia seeds
  • 20 g puffed amaranth or quinoa
  • 50 ml freshly brewed, strong coffee

How to make Coffee Energy Bites – step by step

  1. Brew a strong coffee using an espresso machine or moka pot.
  2. Place the pitted dates in a bowl and pour the hot coffee over them. Let them soak for an hour, then blend them in a food processor.
  3. Add the shredded coconut, ground almonds, chia seeds, and puffed amaranth or quinoa. Pulse gently until combined—the mixture should still have a slightly crunchy texture.
  4. Shape the mixture into bite-sized balls, about the size of a walnut, and place them on parchment paper. Cover them or transfer them to an airtight container and refrigerate for at least 3 hours until firm.

Tips for making the perfect Coffee Energy Bites

These energy bites contain no added sugar—their natural sweetness comes from dates. If you find them too sweet or not sweet enough, simply adjust the amount of dates to your liking. If the mixture turns out too sticky, you can add more almonds or puffed amaranth/quinoa for better texture.

Enjoy your homemade coffee energy bites as a delicious and nutritious pick-me-up!
