When sourcing coffee, we verify its origin and quality, seeking what guarantees a unique taste. We choose the most exceptional, handpicked, and organically grown beans - the kind of coffee we would want to drink ourselves.
The foundation of our offering is specialty-grade coffee. What does that mean exactly? The term "specialty" was first used in the sixties during a coffee producers' conference. It was associated with a shift in approach to the raw material: focusing on quality rather than quantity. In the seventies, Erna Knutsen used the term again in Tea & Coffee Trade Journal to describe the best beans produced under special microclimatic conditions. These coffees were meant to be free of defects and characterized by the highest quality.

Since then, the world of specialty coffee has evolved significantly. Some explanations describe "specialty" as coffee that stands out in terms of quality, taste, and aroma among other readily available coffees. However, specialty is not just about the beans; it encompasses the entire process of creating and preparing coffee, from the fruit to the cup. We are dealing with the highest quality segment in the world, with manual harvesting, multiple quality controls, and meticulous attention to every aspect of the production process. Currently, specialty coffees are those that score 80 points or more on a 100-point scale, and their evaluations are carried out by specially qualified coffee sommeliers - Q graders. This also guarantees a fresh harvest and roast, sustainable development, diversity, purity, and best flavor. These coffees represent only a small percentage of the global coffee market.

Taking into account the origin, species, varieties, growing conditions, and storage, the perfect celebration of farmers' work is roasting the coffee in a way that highlights its attributes. We roast our coffees individually to bring out the fullness of flavor and aroma from each variety and to maximize the virtues of each bean. We also pay great attention to our packaging - we want it to be the most effective solution for maintaining the freshness of the beans and, consequently, achieving an even better result in the cup.
Wysocki Coffee is a Polish, craft coffee roastery. Mateusz Wysocki, its founder, explored the world of coffee starting "at the source," on the plantations. This allowed him to learn the secrets of its cultivation, understand the differences arising from terroir, coffee processing methods, grain quality, and discover how much they influence the final taste. Some say that the world of specialty coffee is a one-way street - once you feel the difference between coffee of this quality and commonly available commercial coffees, you never want to go back to old habits. That was exactly the case for Mateusz. But it didn't end there. These discoveries led to further exploration, learning the art of coffee roasting, and ultimately, the decision that everyone should have access to what's good. That's how the roastery was born.
Mateusz doesn't start his morning without coffee from a moka pot, and throughout the day, he loves indulging in pour-over coffees, especially those from Ethiopia or Kenya brewed in a dripper. However, he also enjoys experimenting, so his preferences change quite often - and he finds that to be his greatest joy. Mateusz appreciates that the world of coffee offers so many flavors, possibilities, and variations that one can constantly try something new. Specialty coffee is simply an ongoing journey, always full of new experiences.

We strive for our coffee not to be reserved only for the chosen few – we dream of it reaching every home and be accessible to everyone. That's why we have minimized production costs to a level that doesn't compromise quality but allows us to significantly lower the prices of our products. This is very important to us.
