Ingredients for the yeast dough

  • 380 g (3 cups) all-purpose flour
  • 170 ml (¾ cup) warm milk
  • 120 g (½ cup) melted and cooled butter
  • 6 egg yolks
  • 40 g (1.4 oz) fresh yeast
  • 75 g (⅓ cup) fine granulated sugar
  • 1 tsp orange liqueur
  • Seeds from 1 vanilla bean

 

Ingredients for the poppy seed filling

  • 300 g (10.5 oz) dry poppy seeds
  • 70 g (¼ cup) honey
  • 70 g (⅓ cup) sugar
  • 30 g (2 tbsp) raisins
  • 30 g (2 tbsp) candied orange peel
  • 30 g (2 tbsp) chopped walnuts
  • 30 g (2 tbsp) chopped almonds
  • 1 shot of orange liqueur
  • 1 tsp cinnamon
  • Seeds from 1 vanilla bean
  • 3 tbsp butter
  • 3 egg whites, beaten until stiff

 

Optional toppings

  • 100 g (3.5 oz) melted white or dark chocolate
  • 1 tbsp powdered sugar for dusting
  • Crumble topping
  • Icing: juice from ½ lemon + about 1 cup powdered sugar

 

 

Instructions

  1. Pour boiling water over the poppy seeds and simmer on low heat for about 15 minutes. Drain well using a fine sieve, then grind the poppy seeds three times using a meat grinder with a fine disc. Set aside to cool.

Cover the bowl with a clean cloth and let rise in a warm place for 1–1.5 hours, until doubled in size.
  5. Divide the risen dough into two equal parts. Roll each piece into a rectangle about 1 cm thick. Spread the poppy seed filling evenly, leaving a 2 cm border on all sides. Roll the dough into a tight log, tucking the ends to prevent the filling from leaking.
  6. Place the rolls on a baking sheet lined with parchment paper, cover with a cloth, and let rise for 20–30 minutes. Meanwhile, preheat the oven to 180°C (350°F).
